Pediocin PA 1
Description
Pediocin PA-1 is a class IIa bacteriocin that forms voltage-independent hydrophilic pores by specifically binding to membrane proteins of sensitive Gram-positive bacteria (such as Listeria monocytogenes), leading to dissipation of the proton motive force, ATP depletion, and cell death. Pediocin PA-1 has no significant activity against intact Gram-negative bacteria, strains carrying immunity genes, or obligate anaerobic commensal gut microbiota, and its bactericidal function depends on the integrity of disulfide bonds, being inactivated upon reduction. Pediocin PA-1 can serve not only as a food biopreservative but also for research on listeriosis.
